    Result:
    Blank rice go bad under the conditions of 30 ℃ 1day, the addition of ε-polylysine can effectively prolong the shelf life of rice.The shelf life can up to 8days after adding 150-200mg/kg ofε-polylysine in it,it indicates that ε-polylysine could be used in cooked rice for fresh-keeping.
